This stately restaurant is designed within the remaining old stone walls of a sugar factory once in active operation on this property. The dining room is located between the lush gardens and the 66-foot, spring-fed pool. Tables are set with fine linens, china and crystal. For a final flourish, fresh flowers are on every table as well as large bouquets on the bar. There is a spectacular view of the Caribbean and sugar cane fields from every table; stepping outside, there's a stone archway that is a favourite photo spot. Chef Pamela Yahn offers an innovative menu that changes daily. Only the freshest of island ingredients are used. Some of her offerings include shrimp, lobster, local fish, veal, chicken, pork and beef, all prepared creatively.
