The Dublin bus tour is a very good idea. Get on one of the jump-on/jump-off buses. You can catch one every 10-15 minutes on O'Connell Street. The drivers on the on-off buses will give you a running commentary, so opt for that instead of the guided 70-minute tour.
Don't plan on spending to much time at St. Stephen's Green; it's just a park like Boston Common with a shopping center next door (and none of the shops inside are very exciting). You will find better shops on Grafton Street.
Bantry, Kinsale, Killarney, Dingle and the rest are all definitely worth visiting. The Lakes of Killarney area is one of my favorites.
I have never heard of Kilcolgan, but Googled it. Sounds like Moran's Oyster House will be a fun place to go - I would keep it on your list if it is not too far off your path. And while you are in Kilcolgan, it sounds like you should also see Tyrone House if you like history and old ruins. Tyrone House is what is left of a grand house built in 1779 that was once the base for the Black and Tans. It is situated on a promontary by the sea, about two miles from the village of Kilcolgan. It supposedly has nice views and walk through the neighboring cemetery.
Ross Castle is only worth the trip if you are going to take a jaunting cart while in Killarney. If not, don't bother. It is just another ruin and there are plenty of those to see around Ireland. If you do take a cart ride, make sure your ride takes you by the Torc Waterfall, too.
Try to go by the Rock of Cashel at night when it is all lit up. It is quite impressive. It's my favorite castle in Ireland.
If you are in Cork and make it over to Cobh (pronounced Cove), make sure to go to St. Colman's Church. It overlooks Cobh harbor and has the most beautiful altar I have ever seen.
