Sounds like a fun trip and I'm doing something similar (from Austin). My only suggestion is try something a little more unique in San Antonio. Dicks Last Resort is a lame chain and there are plenty of awesome local places with way more character.

As we plan this and leave, I'll update this journal about the road trip down, the week, and what we all did and thought about South Padre Island, Texas.

Spring Break 2010 - we decided to do this road trip down to South Padre Island, Texas as it looked really far south (tanning will be better than Florida) and the pictures on Inertia Tours website looked like it has packed spring break parties each night. We also want to do the party yacht cruise. The deal was $449 with a condo at Saida, meals, and the Red Carpet VIP Event Package.
