Quintessential Restaurant, Ofallon

Had dinner at the restaurant with 3 friends just last night, 4/21/10. After reading other reviews, I must say most of them were spot on regarding service. Our 3 hour dinner could easily have been cut by one hour if our server was more attentive and moved a little quicker. The food was good, but if the service continues as is, I would think Quintessential will definitely suffer in patronage, especially when there are so many other good restaurants to choose from on Main St. BIG QUESTION: Does anyone really read these reviews, and what does it take to make a much-needed change??
