I've been a long time customer of Poche's Market. Thought their boudin was about as good as it gets until most recent purchase (Aug 11). I purchased 15 pounds like I usually do and brought it back to my home in New Orleans area. This boudin is barely fit to eat. It has a pasty texture and has off flavor. Pasty texture may be caused by the addition of a heavy roux. At least that is what it appears to be. Needless to say I will be looking for a new source of boudin in the future.
