Hood River WaterPlay has the best reputation in town. Jak, the owner, is the only Master Instructor Trainer west of the Mississippi. I hear other schools use instructors that may or may not be certified to teach. That's kind of scary. But I've had great fun with Hood River WaterPlay.
I purchased lessons for a friend, and the person scheduling was completely uninformed, scheduled me on two different days when a subsequent person I talked to recommended doing everything on one day. The first overpriced "lesson" didn't even involve going out on the water, and the company canceled the second lesson 30 minutes before it was scheduled to begin for no apparent reason(when we had already left and wasted gas to get out to Hood River). They didn't refund all the money they should have, and overall it was a terrible experience. I wouldn't recomment this second-rate company to anyone!
