While he embraces new cooking trends, you still get a glimmer of Santander's traditional cuisine. Good examples of the cuisine on hand include melted goat's cheese on caramelised endive, hake in puff pastry and green pepper sauce, ostrich in ginger sauce and magret of duck with wild fruit sauce.
