Rated the best in Kyushu by those in the know, Ichiran is the premier venue for trying out Fukuoka's specialty tonkotsu ramen--noodles topped by a pork cutlet. This restaurant is well hidden down a side street, and insists on a fairly esoteric ordering ritual as a pre-requisite to enjoying your ramen, but is well worth a visit it. Bowls of ramen in all their varieties cost under JPY1,000 and start as low as JPY600. Ichiran also has branches in Canal City, Nakasu-kawabata and Hakata Station.
When you look at the photo of the ramen and then the real thing - plus the fact that you have to eat behind curtains by yourself to enjoy the noodles, you'll understand that the shop is trying to MAKE A STATEMENT.
The simple statement that this is the Best Tonkotsu Ramen in Japan.
I agree completely. Its sophisticated and refined. Even the noodles are thinner than usual. Everything is done to perfection, and you even get to choose your noodle hardness, soup thickness, oil thickness, how much da-re chilli, the type of spring onion, etc.
Simply unbeatable. Have eaten at hundreds of shops, this is always the best. Yes the amount of ingredients is stinghy, but that's the norm in Japan anyway.
The tonkotsu is slightly lighter than most places (for a good reason). If you prefer stronger tastes, remember to tick the boxes on the stronger side. I prefer it just the way it is.
This place offers the best tasting ramen ever, though it's a bit low on ingredients. A slab of meat and some green onions is about it.
The ambiance is practically non existant and there's no real service to speak of. The customers and staff are separated by small curtains which prevents eye contact.
But the tastebuds keep forcing me to come back over and over again, despite the enormous queue that's almost always there.
