Hillebrand Estate Winery, Niagara-on-The-Lake

Established in 1982, Hillebrand Estate Winery is the most recognized winery in Niagara-on-the-Lake. They have won over 300 awards in international competitions. They produced the region's first ice wine in 1983 and opened the first winery restaurant in Niagara-on-the-Lake in 1996. Winery tours take visitors into the vineyards and underground barrel cellars. Some of their wines include Riesling, Chardonnay, Seyval Blanc, Merlot, Cabernet Franc and several varieties of ice wines. Their acclaimed winery restaurant which overlooks the vineyards, features dishes created by chef Frank Dodd using the finest seasonal ingredients. Some recent menu selections include rack of lamb served with a navy bean and sausage cassoulet, and elk loin served with a cauliflower gratin and maple squash.
