In a magnificent setting in the middle of a park, this property is one of the high points of Bordeaux gastronomy. Since 1963, chef Pierre Burgat has attracted the greatest names to his table. The menu is varied and consists of sophisticated dishes: poached eggs with small pieces of bacon and slivers of foie gras; lamproie (local lamprey eel) cooked in a red wine sauce; tournedos Rossini (steak topped with foie gras); scallops caramelized in saffron; and delicious desserts. The service is attentive in this peaceful establishment with its privileged clientele.
