Rancho DE Chimayo, Chimayo

After decades and decades of eating tacos, I found what all those lesser meals had been trying to do. The pulled beef was stewed to perfection, with more savory goodness than I would have thought possible. The tortilla had a great bite to it and held the juices superbly. Just bit of melted cheese and veggies for texture, and it became the Platonic ideal of taco. The whole experience at Rancho de Chimaya was wonderful. Eating lunch outside in the New Mexico summer is such a pleasure. It's number one on my places to go next time I'm in Santa Fe or Taos.

We eat there every chance we get (maybe once or twice yearly). The food is excellent, the grounds are beautiful, and the staff is friendly. When we travel with family and friends, we make it a point to take them there and everyone falls in love with it. Dining outside in beautiful weather and walking the grounds all the way to the back is a great way to end the day!

We visit New Mexico every few years, and always make this a stop, usually after a loop from Santa Fe to Taos. It's a fitting end to an enchanting day. Simply the best.

One of the best, if not the best restaurant in Northern New Mexico for traditional New Mexican food. We try to eat there every time we travel to Santa Fe from the San Luis Valley of Colorado.

We eat here every time we are in Santa Fe, whether for Indian Market or some other time of the year. The carne adovado is the best and now they bottle the suace. Dining outside is always a pleasure.
