Wow. Michael Tusk is a true genius, full of ambition and talent to match. He is a devote of the organic school of cooking, and a master of it. Each night, Michael changes the menu to take advantage of what is fresh, and, well, to exercise his creative urges. In more than 15 visits, he has NEVER mis-fired. Each dish is wonderful, many of them transcendent. Even worse, it is almost impossible for four people to choose only four items from each course. There are always more choices one wishes one could taste. If only he could take the calories out of them:-)
With the amount of experimentation and creativity, he could be testing recipes for a cookbook. I hope he is.
The menu offers three courses. The first course is appetizers. Occasionally, Michael offers lardo. Which sounded questionable when I first heard it, but his preparation makes this dish transcendant. It melts in your mouth, and makes you want more. Of course, there is a sformato each night, with different flavors, and it is incredible.
The second course is pasta. From gnocci to the agnolotti dal plin, each pasta is house made, perfectly prepared, and full of flavor.
The third course is a more serious serving of meats and fishes. Dessert choices are a cheese cart or a more serious, creative sweet dessert. Don't miss them.
