For the most part we really like your pizzas. However, when I was in your store the other day I saw pizzas sitting on a rack on the counter. No refrigeration system, no ice etc. When I brought this to the attention of the cashier she said that they knew it was wrong but the owner insists it is done this way. We are talking raw dough, cheese etc. I am a kitchen manager who is certified in safe food handling. This is not a safe practice at all for your reputation and health of your customers. Besides the fact they are not being kept at a safe temperature, how is anyone to know how long they have been out, if they are rotated?? Also once stored out like that they most definitely need to be discarded not put back in the refrigerator for resale. Just a suggestion to use refrigeration and safe temperatures for your pizzas/cheese breads.
