They pay attention to when you say you don't want it spicy at all, versus just moderately, versus you want it so hot you'll see stars.
The freshness of the ingredients is fine, but not notable -- that's understandable given that the nearest farmer's market is five hundred miles and one timezone away.
In my experience, always better than the Chinese place just up the block.
