Eating is one of my greatest hobbies. After trying the Japanese food at many Bay Area restaurants, Hana has consistently been the best. Food, service, and atmosphere are all top notch. Even during the few years I lived in Japan, I didn't find many restaurants that I liked as much as Hana. This is an outstanding restaurant.
My favorite sushi in Sonoma County. If you go in Sept-Oct try the Katsuo (Bonito). It is so, so, so good. Also try the Toro. For the best service ask for the Latina girl, she's amazing and will remember you and your favorites, one of the best server's I've had at ANY restaurant. (I wish I was better with names). Expensive, but well worth it.
The service was very slow even though they weren't very busy. When the rolls were brought to our table they were very unimpressive.My wife asked for some extra ginger because of the extremely small amount that was included with the dishes brought to the table and when we got the check we noticed that they charged us for the extra ginger. I've been to numerous Sushi restaurants all over the west coast and have never been charged for requesting some extra ginger. The entire experience at Hana was mediocre at best and our dinner bill amount far exceeded the quality of our experience.
Oh... my... god. This place is absolutely fantastic. The nigiri is absolutely perfect. The service is awesome. The chefs are a delight. I love all of them. Everyone is friendly.
One thing this place has that no other place in Sonoma County does is a very large variety of nigiri. I'm more of a traditional sushi eater, which is why I love this place so much. Every now and then, though, I like a roll. Usually, I'll ask my favorite chef, Eiji, to create his own for me, which, you know, he likes because it gives him a good opportunity to be creative.
Warning to sushi newbs: if you think a sushi place should be judged on its tempura shrimp rolls, you're in for a big surprise. Hana is great for traditional sushi. I love their rolls too, but you have to be one of those people that actually knows what freshness is and doesn't like having their roll smothered in some unagi sauce.

To truly experience Hana's best, sit at the sushi bar and benefit from the chef's recommendations (and from communicating with other diners at the sushi bar.) On our first visit, the chef ran out of a special we'd requested. He asked us what some of our favorite fishes, condiments, flavors were. He then prepared an exquisite, delicately seasoned, wonderfully balanced dish just for us, using many of our most favorite items. He asked our names & wrote the special down next to our names in his book.
Portions are small & relatively pricey - but for the most part, I prefer to eat a smaller amount of exquisitely fresh, artfully presented sushi, over gorging on mediocre or overly sauced-up raw fish or giant rolls. Wonderful premium sakes.
