Hiro is, in my opinion, and after eating sushi in O.C. for 2+ decades at Gen-Kai, Mitsui, Aomatsu, Benihana, and many, many others, EASILY, the top sushi chef in O.C.
Hiro, a Tokyo native, is a fascinating individual, open, selfless, has great humor, and makes numerous, wicked sauces. His clientele is fiercely loyal and be prepared for an interesting experience with others at the restaurant.
Earlier tonight I complimented HIro on being one of the top chefs (in any cuisine) in terms of sauce-making (goes far beyond this though.)
I go weekly to Kotobuki Sushi and easily regard it as one of the top restaurants of any cuisine in the United States that I've been to - and it revolves around one individual's skill, character, and personal touch.
And that individual is Hiro-san.
Kotobuki Sushi is the greatest sushi! It is served omakase style (leave the selection to the chef) and it's just fantastic. Hiro is the owner and head chef and he makes such wonderful tastes that you end up craving it. I am a very, very picky eater, especially with sushi (I’ve had food poisoning many times) and Kotobuki serves fresh, high quality sushi in very tasty combos of sushi! Try it you will love it and go back many times.
Kotobuki's lunch menu is very healthy, fresh, neat, and is the genuine Japanese cuisine that you can find in Japan, unlike their dinner menu which are plain and just like what other Americanized Japanese restaurants have. I recommend their broiled fish lunch.
