We live in Phoenix and are in San Diego often when our son is home at
Camp Pendleton.
We keep two meals open for Tio Carlos'--one for dinner, and one
for the albondigas soup, ususally lunch.
The soup is served hot with a trayful of condiments: rice, cilantro and onion. Warm flour
or corn tortillas (we prefer the
flour) set off the soup for a perfect light lunch.
For dinner, we like anything on the menu that starts with a letter of the alphabet.
The tacos are wonderful.
We are looking for the return of the 2/5 Marines--we'll see our son come home from Iraq, and we'll at Tio Carlos'. Both will be a perfect addition to our day.
