Japon Bistro is unpresumptuous the moment you see it from the street. You could drive right by it every day and hardly now that it was there. But once you try it there is nothing comparable anywhere else in Pasadena for sushi. I have enjoyed Sushi Roku but the prices far exceed those of Japon Bistro and it feels corporate. Mitsuri offers quality sushi but it lacks in atmosphere and does not match Japon Bistro’s creative preparations or service.
There is only one way to make great sushi. You have to start with the freshest and choicest seafood. There is no substitution for quality. Until recent years the best seafood was only available to the most demanding of chefs but now there is no excuse for a quality sushi bar not to be serving a highly rated product.
The next qualification for sushi greatness is in the preparation. This is what separates the good from the great sushi houses. There is more to it than how well they slice the fish. How unique is the way they use flavors and textures without overpowering the fish. How do they make something common more delectable than anywhere else?
I have recommended Japon Bistro too many friends and acquaintances and every one of them has been impressed with the quality, service, atmosphere and value. If you have friends that don’t like sushi… order a Museum roll or a Pasadena roll and watch their eyes light up when they taste it. These have successfully turned a few sushi –haters. Their non sushi menu and specials will not disappoint either.
