Description

Although it's the largest city founded in the 20th Century, Las Vegas retains the energy of a frontier town where the unexpected is still a daily occurrence. The dining scene is equally as adventurous and Charlie Palmer is one of its trail blazers. Sensing that Vegas was about to undergo a renaissance, Palmer made an early investment, opening Aureole in the Mandalay Bay Resort in 1999. The show stopping menu under the direction of Executive Chef Vincent Pouessel combines the classic cuisine of Aureole with the theatricality of Las Vegas in dishes like Olive Oil Poached Oregon Petrale Sole with Truffled Brussels Sprouts and Ahi Tuna and Veal Shank "surf and turf", while a four-story, temperature controlled glass and steel wine towerthe largest in the worldhouses 10,000 of Palmer's award-winning 50,000 bottle list, made accessible by an elaborate pulley system presided over by "flying wine angels" clad in black spandex Calvin Klein. After all, this is Vegas.

Aureole served my wife and I the best meals we have ever had in our entire lives, and we consider ourselves serious foodies. The monkfish osso bucco they served me was fantastic, as were the elaborately presented deserts. The atmosphere was superb, and the service was impeccable (the water glasses seemed to refill themselves sans waitstaff anytime we took a sip). I am actually planning our anniversary around flying out to this restaurant. Wow.

Poor food and even poorer service compared to the expectations created by the amazing welcome of the wine tower. Insensible and snobbish attitude of the waiters spoils the experience. Adding sugar to the dishes is an old trick.

Gorgeous, dramatic restaurant, but food and service were just ordinaire. May be living on past reputation. Prix fixe was nothing to write home about, even at reduced prices. My wife's a la carte selections were somewhat better. Cautiously recommended if you have a rich uncle!

This was a very disappointing dinning experience. For a restaurant that makes their wine (and wine cellar) a center piece, dinners should not have to ask 4 times for the wine list, nor be brought food without having been asked if they want something to drink. The remainder of the service was mediocre at best. On top of that you add almost frozen tomato salad, undercooked rice smelly shrimp equals two very disappointed dinners.

WOW! I had a few minutes and stopped for a drink at the bar. Sitting amid CEOs, Winemakers, & the Sommelier... An impressive and unique wine list included bubblies, the undiscovered Americans, and extraordinary foreign wines. Watching Wine Angels soar, fascinating discussion, and a glass of a most impressive moscato and a thrilling white from Santorini all made for a great evening.

The food here is innovative and most dishes--we ordered the tasting menu--were successful. Yet I would not describe this as an especially memorable meal. The decor is fine, but doesn't live up to some of hype found here and elsewhere. The service was friendly and warm, but not quite up the standards of professionalism one expects at this level. The wine e-list didn't work when we were there, and the wine pairings were hit or miss.

Aureole was a mistake in itself. Most horrific experience at a fine dining restaurant. Besides the prices be outrageous...The spinach dip was very sour, so I asked if I could order something else, they agreed that it was indeed sour. I ordered the sirloin sliders and when they came out the bread was burnt to a crisp, black in some areas. The meat in the middle was RAW and bloody. I brought it to someone's attention and they sat back and talked about it in a different language in front of us. At this point I was done.I asked for our ticket. They asked if I wanted something else, NO. I just wanted to go. Everyone was looking over at us and talking but I couldn't understand what they were saying, I felt very uncomfortable. After 10 minutes of waiting for the bill the waiter came over and presented a dessert menu! What part of we want our check did you not understand? Then the manager came over and tried to smooth things over, he was very nice. We paid the bill, after they comped my meal and left. As we were leaving the manager stopped us and offered us little desserts and champagne. It was okay, champagne makes me sick, but I drank some of it. I think at this point we had such a BAD taste in our mouths that nothing was going to remedy the situation. We ate a couple of the tiny desserts and left. Will NEVER go back.

Aureole has one of the most dramatic rooms in Las Vegas. Setting aside, it is the excellent food and service that make the trip worthwhile. The sweet pea ravioli was an exceptional starter and the duo of beef was likewise a very good choice. The e-wine book is a handy way to navigate an enormous wine list. Service was attentive but unobtrusive. Aureole is expensive but worth every penny. Another winner for Charlie Palmer
