When I came to Las Vegas from Los Angeles in 1998 I was in search of a great mexican restaurant. After trying many different ones around town, I found I kept coming back to Chapalas. FYI, I have been vegetarian for thirty plus years and I have always found enough items on the menu to satisfy my cravings. If I ever want something not listed, the chefs are more than willing to create a special entree' for me. Whenever friends come to visit from out of town, I make it a point to take them there. Inevitably, when they come back, they insist on eating at least one meal there. If you have a reasonably sophisticated palate, you will appreciate and enjoy this food. However, if you think that Buca di Beppo or the Olive Garden is 'fine italian dining', then it's probably best you give this a miss. No review would be worth it's salt (around the rim) if margaritas were not mentioned. I have to admit I'm a little decedant when it comes to really good 'ritas. It may be a little more expensive, but try one with silver Patron. It is the perfect complement to the savory flavours from south of the border. I hope this review has helped some of you in your decision making process. I am confident that the ones who 'get it', get it. Just one more thing, (thank you for indulging me) if you are thinking of planning a wedding reception, business meeting, anniversary party, etc., talk to Jose (Joe) Flores, owner. He will give you what you want, and more! His kind of attention to detail and service are what creates a memorable experience.
