This little diner in the desert of southeast New Mexcio is a must stop if traveling through Vaughn and if you are spending anytime in Vaughn at all, it is your only choice as it is the only true operating restaurant in town. It is located on the eastern edge of town on the main drag (US 285/60) in front of the Oak Tree Inn. A classic 1950s style diner, this cozy little establishment serves excellent food. Burgers, sandwiches, traditional American and New Mexican fares make up the menu. And you haven't sampled everything until you have tried Penny's delicious chocolate milkshakes (2nd best in New Mexico only to the shakes at Evett's cafe in Magdalena). I really like the atmosphere too. Route 66 and 1950s era paraphenalia make up the inside. Speedy service and friendly waitresses. The night we were there in July 2009, my wife and I sat enjoying cheeseburgers and fries while watching a spectacular lightning show out the window in the distance. What better way to spend an evening? We'll be back.......
