We worked throughout the State cabling schools for Data Infrastructure for Computer Assets and found this resturant to be the very best. The salsa was hot but soooooo good you couldn't put it down. Miss the place and wish we could return. This resturant and the people of New Mexico are the best!
I didnt like the service they provide,
Maybe because i didnt dress or look like i have lots of money,
Staff were not frendly except the guys that was cleaning our table after the lunch( said thank you for coming, i hope he gets the tips that we left)...
This resturant is more for show then for food and service..
Been there once and never going back again in life, even if thats the last resturant on earth..
Ps. dont judge book by cover, you probally saw with the tips that we left....
I drive from Albuquerque to Espanola every few weeks for the sole purpose of eating at El Paragua. The best dish is actually on their lunch menu, but if you ask for it at dinner they will make it for you: pulled roast beef chimichanga smothered in green chile. Now I'm totally craving it again and will have to make the pilgrimage again soon. Everything else I've sampled from other people has been great, too, but I can't bring myself to order anything else for myself.
Wonderful food! Service is not too bad, it depends on how busy they are. Friday and Saturday nights are the busiest. Try the chicken tacos, they are nice and moist, not too dry like most restaurants have them. Best New Mexican food in the north.
Ate here a few nights back, what's happened to this place? It used to be the best food choice for at least 20 miles. I had the chorizo enchiladas, the chorizo was very very dry, and the chili is nowhere near the quality I had fond memories of.
Even worse, the service was abysmal. Maybe it was short-staffed? Our margaritas didn't come out until our meal was almost served, and I'm sure my margarita did not contain the tequila I ordered.
I'm going to stay away from here for the time being, until I start hearing better things.
