We ate breakfast at Chili Hills recently (April of 2012). Our biscuits were smashed,LEFTOVER dinner rolls that were buttered and toasted! When we were paying our tab, we saw a whole stack of them being pushed off on the breakfast crowd! I was very disappointed. In the future, I will go to the local McDonald s if I want a biscuit with my breakfast. Pretty sad when a fast food place can beat a mom and pop diner in quality. I have eaten at Chili Hills several times and always walk away less than satisfied on some level. In a town with few choices of restaurants, Chili Hills is ok, but I will not eat there again because of their disregard of quality and their customers with decisions like this.
Chili Hills is owned by Ralph Hill and his wife Susan. Ralph's family has been active in Edgewood, New Mexico since Ralph was a child. His father purchased a small ranch outside of Albuquerque and would take his four kids there on the weekends to ride horses and get out of town. Today Edgewood is a busy place - it even has a Wal-Mart and Walgreens! Chili Hills is a hometown diner where all the cowboys gather in the early morning hours for a cup of coffee. The breafkast caters to those with hearty appetites. Huge plates of huevos rancheros are served with fresh red or green chili, cheese, eggs, hashbrowns and pinto beans. Lunch and dinner offer familiar New Mexican cuisine such as enchiladas, tacos, chili rellenos and other great items. In addition, there are weekly dinner specials ranging from fried chicken to salmon. If the chef is feeling creative - there may even be a Greek night or other ethnic meal offered. Homeade pies sit in the refridgerator waiting to be eaten. The staff at Chili Hills are always nice and welcoming. They call out to regular customers by name and hand out coffee before even being asked. On the weekends there is a musician strumming a guitar and singing great old cowboy classics. Last year they added on an outdoor patio. This is a great little place with great food!
I live in Edgewood and go to Chili Hills whenever I get a chance. I love the food and the service is great!! The weekends they have all you can eat on different kinds of foods on different nights. You must try the food if you get a chance.
