We went to Miguel's with relatives who live in Moab and recommended it. We were not disappointed - the fish tacos were tasty. The beans and rice were fully flavored and did not taste like they had been poured out of a can and heated. Miguel's provides each diner with a very hot pepper which has a long afterburn as well - so there's a challenge for the iron-palate folks. Service was friendly and efficient. What's not to like?!
