Can't believe I'm in Salida, CO!

What a surprise to find this place in Salida, CO. Salida is pretty rural, only 5800 souls here. The Laughing Ladies Restaurant belongs in Denver or Chicago.
The owners left Napa Valley 10 years ago to live in the mountains, close to skiing and fishing, and thank goodness they found Salida. Owner Jeff is very talkative, and he gave me the whole story over my fresh halibut dinner.
All the food is prepared fresh, with out using microwaves or can openers. They learned a lot in Napa Valley, and mostly the passion shines through. Killer wine list, including a bottle of Franciscan Oakville Estate Cabernet for only $36 bucks.
Oh, one of the chefs is now running their Downtown Bakery around the corner, and they make an AWESOME sourdough baguette. Yeah, sourdough in Salida, CO Can you believe?!?
Try any fish dinner they serve, you can't go wrong. Just remember to call ahead, as their hours are a bit unusual closed tues/wed(?) I think.
