Absolutely the best brisket! While so many bbq places are assuming that everyone wants brisket completely trimmed of any and all fat, Rudy s gives you a choice. In my opinion, a lot of flavor is in the fat, and trimming it away makes the meat dry out. I have driven 2 hours from my home to get Rudy s moist brisket to bring home for my family (and will not hesitate to do it again) because all the places around here sell trimmed brisket. If you request that the fat be left on (if the brisket hasn t been trimmed before cooking), they give you a look and then act put out when they have to take a fresh one out in order to get the fat. The green chile stew is very good, and unlike a lot of places, they not only have a larger variety of sides, but most if not all, are made by them...not purchased from a supply company. Rudy s rocks!
