Well I'm very picky about BBQ and Railhead for me was a love/hate thang. It's one of the few left in the OKC area that does it the old traditional way. No commercial BBQers here, they have a real wood pile out back. The problem is with a beautiful job of smoking ribs, they either foil or steam them until they are like mush or baby food, flatout kills the texture of traditional BBQ. There was hardly any smoke flavor left after the steam job. The sides are average to good and they have a great lineup of sauces. It's a shame because they could be one of the very best if they didn't steam their ribs.
