Chefs night off!!!!

My wife and I dinned in February 2008 as it came highly recommended to us by a friend. We had a lovely time and the service was excellent, my wife enjoyed her food and was very happy. I had some issues with my meal but did not want to make a fuss about it at the time as they had a fairly full restaurant and I did not want to embarrass anyone. I started with the Foie Gras, this was not too bad but when I was eating it I had a mouth full of Foie Gras veins! I always eat Foie Gras and I would have expected the veins to be removed before preparation!! I then had the poached sole with wild mushrooms, the sole was not cooked through, the sauce had baked onto the plate, obviously it was plated and then left under a hot light for to long subsequently ending up dry with no sabayon.
I finished with the crepe soufflé which was cooked on the outside and golden brown but the soufflé mix inside was still raw and tasted like beaten egg whites with orange flavour, it needed to be cooked a little longer in my opinion, the sorbet had almost completely melted on the plate and mixed with the sauce telling me it had been plated and left for a wile before I received it.
It was the first time I went to the restaurant and I was expecting a lot better, the head chef was obviously having a night off, I did not want to make a big fuss as I am also in the same industry. I feel I must tell you about all of these issues, my wife and I thought that the restaurant was lovely, we did enjoy ourselves and the wine was excellent, we will be back again to give it another chance but next time we will check the head chef is going to be cooking!!!
