Panchos and Gringo's opened it's doors on March 3, 1987 in Brookfield Ct. John Matos decided to relocate to Brookfield after successfully owning Pancho's and Gringo's in Mount Kisco, N.Y. He visited the area and had a vision. A vision of opening a Mexican Restaurant and raising a family in a small welcoming town such as Brookfield. Our Motto was, "Mi Casa Su Casa" (my house is your house). When John opened the doors of his house for the first time he held his breath and crossed his fingers hoping that this area would welcome him. And boy...did they. We started out in Candlewood Village and in 1996 expanded and relocated right next door to our current location. After starting in Brookfield, John and his nephews opened other restaurants in Southbury, Southington, Monroe, Prospect and Litchfield Ct. Although these restaurants are no longer John's, the initial concept is still the same for all of the restaurants. In 2006 John decided to open a restaurant in Bethel Ct., after the closing of his Ridgefield store in 2005. This new location at the Dolan Plaza in Bethel is doing very well and has been accepted tremendously by the community. Our excellent service, food and music provides the perfect atmosphere for families, the young and the old. If you are looking forward to having a great meal in a wonderful environment, with a friendly and cordial staff, than Pancho's and Gringos is your restaurant. Our Familia at Pancho's aims to make your visit one you won't forget. We have changed our "motto," We've updated and expanded our menus and try to keep up with the times and trends it brings along, but we still have the same great service, good food, good drink and good time!!
I've been coming here for years and always leave satisfied. The menu is huge with many choices. Margaritas and sangria are delicious. Many vegetarian options. Rice & beans are always yummy. Decor is fun & festive. The prices are a little high, especially for a more commerical place. I prefer drinking in the dining room, not a big fan of the bar area (the one time I just went to the bar, bartenders were terrible). New outside seating is a nice touch, as well. Overall good Mexican food and good for both families & going out with friends for drinks.

The staff tries, usually, fairly hard. Menu offers an average # of choices.
Interior could use an upgrade & a good cleaning- Years of Dust build-up on hanging things/visible from quite a distance. Lot of flys also. They do swat em quick (flyswatters conveniently attached to side of wall).
Prices are way too high for this type of food & place. Dinner for 4 (chicken- nothing fancy) with 3 alcoholic beverages & 2 deserts was just under $100 (incl tip). Had to doublecheck the bill & was surprised to see it was right- the prices are out of line with the average cost of this type of eatery though so far that - 2 stars. Otherwise 3.5
The original Mariachis are gone & they have been replaced by 2 imposters who used to work down the road at the 'other' mexican place. They are dirty, loud & tip hungry. So loud the waiter got the whole order wrong. Left out one of our entrees too... always fun when someones sitting there without any food & everyone else is getting ready to eat.
First of all, let me tell you both times I've gone to Panchos & Gringos there have been flies buzzing around all over this place. It's actually disturbing how many there are. Not a good first impression. As for the food - I can't say much - it's dissapointing. The service isn't great either. I wouldn't bother - there are better options. Try Senor Panchos in Southbury.
Entertainment, food and atmosphere are excellent, a bit on the pricey side, but well worth visiting. Food is Mexican, some dishes adapted to American tastes. Kids loved the fried ice cream! visisted many times
I am on a tour of all of the mexican bars and restaurants around. I must say I was highly disappointed with Pancho's. Our group of three asked to be seated in the bar area since we were only planning to have some drinks and an appetizer. The prepared drinks (a peach margarita and a pi�a colada) were ok, although nothing spectacular. We then ordered the Sloppy Nachos appetizer. It took quite a while for the nachos to arrive - much too long for a plate of nachos on a non-crowded Wednesday night - and when we finally got them they were rather burnt around the edges and not very tasty. What was apalling though was that after only about 10 minutes with them the waitress sent over a bus person to collect our plates. I politely asked them to leave them since we were still working. I tried English. I tried Spanish. I tried gestures. Over the next twenty minutes or so they tried to come take our plates no fewer than 5 times!!! And then, when I looked away from my plate for a moment to listen to one of the members of my group, someone actually SNUCK MY PLATE AWAY!!!!!! Our overall impression was that they really didn't want our business, which is too bad - we would have stayed for at least another round of drinks.
