I didnt like the service they provide, Maybe because i didnt dress or look like i have lots of money, Staff were not frendly except the guys that was cleaning our table after the lunch( said thank you for coming, i hope he gets the tips that we left)... I drive from Albuquerque to Espanola every few weeks for the sole purpose of eating at El Paragua. The best dish is actually on their lunch menu, but if you ask for it at dinner they will make it for you: pulled roast beef chimichanga smothered in green chile. Wonderful food! Service is not too bad, it depends on how busy they are. Friday and Saturday nights are the busiest. Try the chicken tacos, they are nice and moist, not too dry like most restaurants have them. Best New Mexican food in the north.

Great food-unpretentious setting. The Margaritas are the best(strongest)around, try a "Ronnie Special" but be sure to have a desig.driver. Ate here a few nights back, what's happened to this place? It used to be the best food choice for at least 20 miles. I had the chorizo enchiladas, the chorizo was very very dry, and the chili is nowhere near the quality I had fond memories of.
Even worse, the service was abysmal. Maybe it was short-staffed? Our margaritas didn't come ...
