I love IL Falconiere
OK...so I just read the last review from the American Student who completed a stage or placement, and must disagree. I too am a postgraduate student from Canada and completed a 12 week stage with Chef Titi and for those who are looking for a wonderful experience, this is the place to go...yes you are expected to work hard, and yes you should have at the very least, the basic fundamentals of cooking...which from my experience, the American Students from California lacked. You can lead a horse to water, you can't make them drink. It is not Chef Titi's responsibility to teach you how to cook...you should already be prepared and have learnt this at school...isn't that what you pay tuition for? Your experience in Italy is to learn different cooking techniques along with pure, organic, "slow food" produce...understanding flavour, wild boar...etc. If you are a student and want the complete experience of Italy, IL Falconiere is the place for the open minded, outgoing chef that wants to strive to be the best and learn the most.
